Low Calorie Ras Malai Recipe

Ras malai, originally originated in Orissa, is a very popular milk based dessert in India. It consists of sugary, cream colored (can be yellow also) balls of paneer soaked in malai and flavored with cardamom. It is specially made during the festive season (like Diwali).

Ingredients (Makes 20 pieces)

  • Milk - 1 liter
  • Vinegar - 1 tsp
  • Corn flour - 1 tsp
  • Water - 1 cup
  • Almonds - 10
  • Sugar/sugarfree natura powdered - 1/2 cup

Instructions

  1. Take 500 ml milk, and boil it. Add vinegar, till paneer is seperated.
  2. Switch the burner off and cover the paneer for 1 min with a lid.
  3. Strain the water away. Do not press too hard on the strainer.
  4. Take the paneer in a plate, and add corn flour to it. Beat it till it becomes a soft dough and make small balls out of it.
  5. In a pressure cooker add water and sugar free. Let it boil.
  6. Put the paneer balls in it and cover with the lid. Pressure cook to one whistel.
  7. Take the remainig 500 ml milk in a kadai and boil it. Remember to keep stirring the milk or it will stick to the bottom and give a burnt flavor. Simmer it on low flame for 15 min.
  8. Let it cool. Add the rasgullas (the paneer balls) to this mix and add 2 tsp of sugarfree. Decorate with chopped almond.
  9. Serve it cold.
