Grilled Pepper Chicken Recipe

Grilled double-breasted chicken flavored with honey, lemon, fresh red chilies and black pepper.

Ingredients (Makes 4 Serving)

  • Chicken breast double - 4
  • Garlic (lahsun), chopped - 10-12 cloves
  • Ginger (adrak), chopped - 1.5 inch piece
  • Black peppercorns (kali mirch), crushed - 1 tablespoon
  • Dijon mustard - 1.5 tablespoons
  • Lemon juice - 1 tablespoon
  • Honey - 1 tablespoon
  • Fresh red chillies, chopped - 4
  • Sugar - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Oil - to grease
  • Onion, sliced - 2 medium
  • Salt - to taste

Instructions

  1. Remove wing bone from the chicken breasts and make even slits on them.
  2. In bowl mix chopped garlic, chopped ginger, crushed peppercorns, mustard paste, lemon juice and salt. Add honey and mix again.
  3. Add the chicken breasts to this mixture and let them marinate for about thirty minutes.
  4. Preheat oven to 180 degree C. Take the chopped fresh red chillies, sugar, salt and two tablespoons of olive oil in a plate and mix.
  5. Take the chicken breasts out of the marinade and apply this mixture on both the sides.
  6. Put oil on a baking tray to grease and arrange the sliced onions to form a base. Keep the chicken breasts over this. Mix both the remaining marinades and pour over the chicken breasts saving a little for later use.
  7. Keep the tray in the preheated oven and bake for ten minutes.
  8. Add the remaining olive oil to the reserved marinade mixture and baste the chicken breasts and continue to bake till done. It may take around twenty to twenty five minutes.
