
A sore throat is usually a symptom of edema in the throat tissue. It can cause a difficulty swallowing and an increase of mucus in that area. Salt has a natural tendency to drain its host of water. When you gargle with the salt water, the salt salt works its way into your throat. Through osmosis, the salt draws out the edema fluid, killing the bacteria, which requires a warm, wet environment.
However, do not use too much salt as it can harm your throat and lead to even greater irritation than what you started with. Gargle in moderation, then go see a doctor if your symptoms persist.
