
Soluble fiber interferes with the absorption of dietary cholesterol by binding to bile acids (necessary for fat digestion) made by the liver from cholesterol and carry it to intestine for defecation. As a result, the liver must use additional body stores of cholesterol to manufacture new bile acids. Good sources of soluble fiber include apple, guava, berries, barley, oats, carrots, sweet potato, soybeans, peas, beans etc.
