
Anthocyanins are compounds found in plants, particularly berries, that have powerful antioxidant properties. Anthocyanins also provide some of the coloring or pigment of red/purplish fruits and vegetables, including purple cabbage, beets, blueberries, cherries, raspberries and purple grapes. Anthocyanins are the largest group of water-soluble pigments in the plant kingdom and belong to the family of compounds known as flavonoids.
