    One should use a variety of oils for coking. I use mustard and olive oil for dry veg, olive oil and pure ghee for curries, rice bran for deep frying. Again olive oil for parathas and eggs. Try these four types for, it's quite good (confirmed by two dieticians also).

    Chhavi is correct. One should use a mix of oils and should keep changing the oils after some time.

    Adding to Chhavi's answer,
    For dressing Olive Oil and Flaxseed oil is best because of their high Omega-3 fatty acids content.

    Himanshu, Can you tell me something more about flaxseed oil. I have never used it. Where is it availabe? We eat roasted flaxseeds.

    @Chhavi
    Flaxseeds can eaten in the seed form and one can use the flaxseed oil as well. See the article: http://www.lifemojo.com/lifestyle/health-benefits-of-flaxseeds-2089329 to know its benefits. It is available in super stores and some organic foods stores.

    It should NOT be used for cooking. One can use it for dressing or take a tea-spoon of oil in the morning as it is.

    The only person that you should be listening to is the expert in oils himself, and his name is
    Udo Erasmus. I have done my homework when it comes to 'oils' and he is the man!

    Truly the best cooking oil is coconut oil. Then use Exyta Virgin Oil to drizzle over everything such as soups, potatoes ,Roasted Vegetables, salads etc etc etc. The reason for this is that Olive Oil once it is heated it losses all the nutrients. Coconut oil on the other hand will not and is not saturated oil. You may go to Dr Ben Kim's website or Dr Mercola's website but make sure you buy Good High Quality coconut oil.
