For bread sandwich variety of chutneys are prepared:-
1) CORIANDER MINT CHUTNEY:- Take 1 bunch each of fresh coriander & mint, 6-8 cloves of garlic, 1 inch piece of ginger, 2-3 green chillies & salt according to taste. Now cut roots of both coriander & mint, peel garlic & ginger & remove stalks of chillies. Wash them thoroughly & then grind them in a smooth paste.
2) GARLIC CHUTNEY:- Take 3 garlic pods, 10-12 roasted red chillies, 1/2 cup grated fresh coconut, 1 tsp oil, little tamarind pulp & salt acc to taste. Now saute garlic & coconut in oil & then grind this mixture with tamarind pulp & red chillies into a smooth paste.
3) TOMATO CHUTNEY:- Take 3-4 tomatoes, 1 medium onion, 3-4 cloves of garlic, 3-4 green chillies, 1 tsp oil & salt acc to taste. Now saute onion, garlic & chillies till light bown. Then add chopped tomatoes & salt & cook for 10 min on low flame till everything is cooked properly.
4) MINT CHUTNEY:- Take 2-3 bunches of chopped mint leaves, 1 chopped onion, 1 tsp ginger-garlic paste, 2-3 green chillies, 1 tsp each of cumin seeds & channa dal, 2 tsp lemon juice, 1 tsp oil & salt acc to taste. Now first fry cumin seeds then channa dal, chillies & onion for 2-3 minutes. Then add mint leaves & again fry. Now blend this mixture with lemon juice & salt into a smooth paste.
