Soaking of pulses and grams helps in reducing many anti nutritional factors that are harmful.But in doing so some water soluble nutrients like B vitamins are lost.

Soaking the dal or millets or whole grains can increase the nutrients which gives you good benefits for health but high usage of water may reduce some of water soluble vitamins.
